Roasted potatoes are one of my absolute favorite meals! Or is it a snack? Hard to say because every time I pass by that baking sheet of crunchy olive oil or fat covered bites I can't help but snack on them! It doesn't matter if they are mini red potatoes, large russet potatoes, or purple fingerling potatoes - I love em' all!
Not only can you have them as a snack, but my favorite way to enjoy them is either with a seasoned sour cream sauce, underneath eggs and hollandaise, or tucked into a massive and delicious breakfast burrito. Ya, my mouth is watering and I should really eat breakfast.

My personal favorite pairing with potatoes! This recipe includes juicy salmon with a creamy yogurt lemon garlic sauce that is packed with fresh herbs.
