How to make Easy Vegan Bagels:
- Preheat oven to 375 degrees.
- Mix 1 cup of yogurt and all the flour in a mixing bowl and mix until combined with a fork, spatula, or dough hook, add yogurt as needed to create a mix but can still be molded but is still soft. The thinner the yogurt, the less it will take. I add everything to bowl of a stand mixer and then let the dough hook attachment do the work.
- Turn the dough out onto a slightly floured surface. This is not a firm dough! The dough will be sightly sticky.
- Gently form the bagel dough into a dough ball and divide into 4 equal pieces
- To form bagels, you can do it one of two ways. Option 1: Roll each piece into a log and bring the two ends to meet. Twist the ends together to form a classic bagel shape.
- Option 2: Form a ball with each section and punch a hole through the middle. Gently spin the bagel, holding the opening steady to smooth the center of the bagel. Add flour as needed to work the dough.
- Place bagels on a greased or lined baking tray. Brush the top with a milk wash and then top with desired toppings. Bake for 25 minutes or until golden brown and the bagels sound hollow when tapped with a utensil. You can broil them on high for 5 minutes to finish them and get that golden brown top.

These homemade vegan bagels are of course vegan and could be made gluten free by using a recipe like this one to make your own self rising gluten free flour. Depending on your toppings, these may not be vegan. Plain bagels, cinnamon sugar, everything would all be vegan and jalapeno cheddar can be with plant based cheddar cheese!

2-3 days in an air tight container or plastic wrap at room temperature or 1 week in the fridge. These tend to become tough when stored in the fridge, so simply heat them in the microwave for 1 minute to soften.

What is self-rising flour?
Self-rising flour is a staple in southern baking and cooking. It is flour mixed with salt and baking powder. This saves time when baking and will make your dough rise! It can be found in the baking aisle next to all purpose flour. You can also make it yourself with a recipe like this.
What about boiling? Don't real bagels need to be boiled?
There is no doubt that boiling produces classic chewy bagels, but we rarely have time to boil and, in our opinion, these easy homemade bagels taste nearly as good. However! These can be boiled. If you do want to boil them, heat a large pot of water until boiling consistently. Use a slotted spoon to gently place two to 3 bagels at a time in the water. You may need to move them in a circular motion to keep the bagels from sticking to each other. Let the bagels boil for 2 minutes per side then remove and place on paper towels to absorb excess moisture.
Substitution Options
All substitution options are a 1:1 substitution unless noted otherwise.
Self rising Flour: Gluten free flour or all purpose flour can be mixed with salt and baking powder using one of the recipes noted in the Quick Facts section above.
Vegan Greek Yogurt: If not vegan or dairy free, you can use regular greek yogurt. You may be able to use regular style cashew based yogurt, but add ¾ ths of a cup of yogurt to start and slowly add until the desired texture is achieved.
Milk: Any plant based milk can be used or vegan butter, melted. Whisked eggs can be used also if not vegan.
Vegan Toppings: Whatever your favorite bagel topping is! Some ideas include: Brown sugar, poppy seeds, sesame seeds, sunflower seeds, everything bagel seasoning, sea salt, maple syrup, chocolate chips, and so many more. We also like to top with a vegan cream cheese spread, vegan lox, or peanut butter.
