I remember a couple of years ago when protein balls were all the rage. Like a granola bar, except made at home, cheaper, and can be eaten in one bite (ok, maybe two). They have maintained their high status on social media and in households across the country with tons more variations now than when they first went viral.
As the holiday season fast approaches, we are always looking for ways to have healthy, quick food around the house for in-between events. And we usually have half cartons of cookies, cookie butter, or candy left over. This time we had half a jar of Biscoff butter to try and use up.
So, we thought, let's do Biscoff biscuits protein balls! I mean, Biscoff butter is just like peanut butter so it should work - right? What we came up with is the perfect combination of healthy, sweet, and spice protein recipe that can be enjoyed on the way out the door or after your workout.

Ingredients and Substitutions
All substitutions are a 1:1 substitute unless otherwise noted.
Oat Milk: Oat milk is our preferred milk here because it is mild in flavor so as to not over power the Biscoff flavor. It also has a longer shelf life than dairy milk in and out of the fridge.
Substitutions: Any type of milk you like can be used, but we highly recommend using plant based milk such as almond milk or coconut milk. If using dairy milk, be sure to check out the storage notes for how long they keep.
Biscoff Cookie Butter: The star ingredient! Biscoff butter has a similar texture to peanut butter but has lots of warm holiday spices. If you're looking for more ideas to make with Biscoff check out our 16 Lotus Biscoff Recipes post!
Substitutions: Cookie butter can be used in place of Biscoff butter or a plain nut butter for a less sweet version. Also, we believe blended biscoff cookies will work if you add more milk, although we have not tested this!
Rolled Oats: Rolled oats provide stability and texture for these protein balls. They also help to absorb the oil in Biscoff butter.
Substitutions: Quick oats can be used, but steel cut cannot be used. You can also use oat flour, almond flour, or coconut flour and skip the blending it.
Vanilla Protein Powder: The protein powder is another ingredient that provides stability as it acts like flour. It is also how we can pack in protein in the little bites.
Substitutions: Any protein powder with a similar flavor profile will work. We highly recommend I Heart Macros or KOS for a vegan protein. These proteins do not have a traditional chalky taste and are much easier on the stomach for those who have a hard time digesting protein.
Add ins: These Biscoff bliss balls are amazing just the way they are! But if you do want to spice them up a little bit, some ideas for add-ins include white chocolate chips, chopped nuts, and chia seeds.
How to Make Biscoff Protein Balls (with photos & video!)
Step one: Add oats and protein powder to a blender or food processor. Blend for 20-30 seconds, until the oats are finely chopped.
Step two: Pour blended oats and protein powder, Biscoff butter, and oat milk into a large bowl. Mix with a fork or spatula until well combined, it will resemble cookie dough.
Step three: Use your hands to roll approximately 1" balls. You should be able to make about 12 balls with the amount of ingredients used.
Step Four: These biscoff cookie protein balls can be enjoyed right away, but will be slightly sticky and soft. To harden, place protein balls in an airtight container and put them in the fridge to cool.

Helpful Tip!
For the milk in this recipe, a little goes a long way. If you think you need more milk, be sure to just add a splash at a time and then mix well!
For more crunch, try topping with melted chocolate and crushed Biscoff cookies. You can also mix in chocolate chips or white chocolate chips for added crunch and sweetness.

No, Biscoff butter is not high in protein. It provides sweetness and a binding agent for these protein balls.
Are energy balls actually healthy?
Another name for protein balls are energy balls. Energy balls are packed with fiber from the oats, healthy fats, and protein. So while yes, they have sugar in them from the Biscoff butter, these are also nourishing and will keep you full while giving you that kick of sweetness we all want sometimes.
When should I eat protein balls?
Protein balls can be eaten any time of day. But, they can be helpful when enjoyed as a pre or post workout snack. By enjoying these before a workout, you can give your body the boost in carbs and sugar to kick start and fuel you through the workout. When enjoyed after, they provide protein to help your muscles rebuild.
Can these bites be made vegan?
Yup, just use a vegan protein powder and check your ingredients on the Biscoff spread.
Storage Tips
Wondering how long do protein balls last in the fridge? We’ve got all the tips for storing these yummy bites!
Fridge: Store these in a single layer in either a covered plastic container or in a ziplock bag. If storing more than what fits in one layer, place a layer of parchment paper between the layers to keep them from sticking. These will keep for 2 weeks in the fridge when made with plant milk and 1 week when made with dairy milk.
Freezer: Store these in the same manner for the freezer as you would for the fridge (separate layers). They will keep for 3 months in the freezer and are delicious when eaten right out of the freezer!
