I'm very particular about protein balls. I hate to say it, but generally, ones with protein powder have the best texture. That is until I started testing protein balls without protein powder. With just a bit of almond flour and oat flour, these Snickerdoodle protein bites have that perfect, edible cookie dough texture that won't melt when you take them out of the fridge.
is this fall in a small bite-size form?
The answer is yes. Yes, it is! It is coated in cinnamon and sugar, and really, you can add any other spice you want (perhaps make it your own pumpkin spice latte snickerdoodle protein bites -- PSLSPB for short). But let's be honest, they're good for any season!
ingredients & substitutions
All substitutions are a 1:1 substitute unless otherwise noted. See the recipe card for quantities.
- Almond flour and oat flour: Use additional oat flour or hemp flour in place of almond flour if you can't have nuts. They will just have less protein.
- Cane sugar: The less processed version of your typical granulated sugar, but general white sugar works just fine.
- Maple syrup: You can reduce the sugar by using half the amount of maple syrup in the balls. Just add more milk as needed.
- Cashew butter & salt: I love to use cashew butter because it's the mildest type of nut butter (especially compared to peanut butter), but it is still creamy and smooth. It's important to use drippy nut butter. You can also swap out almond flour, but I don't recommend peanut butter - it's too overpowering.
- Milk (as needed): Use any milk you like. Plant-based or dairy is fine.
- Coating: Made out of cinnamon and cane sugar - yum!

high protein ingredient spotlight: almond flour
I love using almond flour as a substitute for normal white flour as it packs more protein and is gluten-free! For every 100g of almond flour, there's about 22g of protein. Using almond flour also adds a little bit of a nutty taste, which I love in recipes like these protein bites. Obviously, if you have a nut allergy, go ahead and use another similar flour like quinoa, hemp, cashew, oat, or coconut flour for these protein bites.
here's how to make snickerdoodle protein bites
- Add everything for the bites, except the milk, to a large bowl. Use a hand mixer to mix until well combined.
- Add the milk if the batter is too dry and mix again. It should be scoopable and hold together when pressed but not wet. Start with just 1 tbsp.
- Mix together the coating ingredients in a bowl.
- Shape the dough into 16 balls. I like to use a 1.5 tablespoon cookie scoop for this. Roll each one in the cinnamon sugar-coating mixture. Enjoy it right away, or store it in the fridge!

- The consistency is key for protein balls: We're looking for a moist batter, slightly dryer than a standard cookie dough.
- Speed up the process: A hand mixer (or stand mixer) and a cookie scoop will come in real handy!
- Use a cookie scoop: For uniformly-sized balls, use a small cookie scoop or ice cream scoop to portion the mixture.

do I have to refrigerate these snickerdoodle bites?
Yes, these bites need to be kept in the fridge because they have milk in them. However, they will last just fine, not in the fridge for up to 4-5 hours. And just like these brownie batter protein balls and Biscoff protein balls, these snickerdoodle ones will not soften when out of the refrigerator!

No! So don't worry about your yummy energy bites having a chalky aftertaste. For every 2 balls, you will have eaten 9g of protein. However, if protein powder is your thing, go ahead and add it! There are lots of flavors that would go well with this recipe. This will also reduce the overall carbs.
Yep! You can throw them into a ziplock bag and freeze them for up to 3 months. Just set them out to thaw for a little bit, and then you'll be good to go.
The short answer is yes. But as always, you will want to check that all your ingredients do verify that they are gluten-free. Also, if you are substituting any ingredients, they may not be gluten-free!
