These sheet pan huevos rancheros are everything the classic is: two runny eggs, punchy salsa, refried black beans, crispy tortillas. But you make all of it in the oven! No frying pan, no babysitting eggs, no serving six people in shifts. Each serving hits 30g of protein from eggs, beans, and Greek yogurt.

I've ordered huevos rancheros at every brunch spot I've been to! And the experience is always the same: one perfect plate, eaten immediately, but I could never replicate it at home because someone is always waiting while someone else is eating. It's a labor of love!
Making them at home the traditional way means standing over the stove, frying tortillas one at a time, then managing eggs in batches so nobody's plate goes cold. First, I tested a huevos rancheros-inspired egg bake similar to our cottage cheese egg bake, and it was fine, but nothing to write home about.
Then I tested this sheet pan version to be way easier, but stay true to the delicious flavor! The tortillas get those yummy, crispy edges, the beans and salsa go straight from the can, and all twelve eggs bake at once. Everything is ready at the same time, for everyone, in about 25 minutes. Booyah!

watch the eggs, not the clock
Ovens vary. Start checking at 12 minutes. You want whites that are fully opaque with no wobble, and yolks that still jiggle when you shift the pan. Pull them then! Carry-over heat will finish the yolk in the time it takes to add toppings.

key ingredients & swaps
All substitutions are a 1:1 substitute unless otherwise noted. See the recipe card for quantities.
- Corn tortillas: Small 6-inch corn tortillas fit six on a standard half-sheet pan without overlapping, and the edges crisp in the oven in a way flour tortillas just won't. Flour tortillas hold too much moisture and go soft.
- Refried black beans: Perfect to use straight from the can! These add fiber, protein, and structure to hold the eggs. Regular refried pinto beans work the same way if that's what you have. If you have more black beans to use, try them in these high-protein Chipotle breakfast burritos.
- Eggs: Large eggs work best; the whites are thick enough to set cleanly without overcooking the yolk.
- Toppings: Finish with your favorite salsa, cotija cheese, avocado, Greek yogurt (in place of sour cream), and fresh cilantro. You can also take it up a notch with pickled onions.

build your wells for the eggs
The beans are doing two things: flavoring the base, and creating a nest that keeps the eggs from sliding around. Spread the beans and then press firmly with the back of a spoon to form a clear, deep depression in the center of each tortilla. If the well is shallow, the egg white spreads thin, and the yolk cooks too fast.


step by step: tips to nail this recipe every time
- Salt and pepper to taste: Always season as you go! But remember, cotijar cheese and the canned black beans are both salty, so go slow with the salt.
- Two eggs per tortilla takes a little care: Crack both eggs close together in the well. The key is getting them onto the beans before the white has a chance to run off the edge. But if they do, no worries - it'll still taste yum!

can I make these ahead of time?
Corn tortillas are pretty hard, so you can prep the tortillas and beans up to 24 hours in advance. You can also pre-chop your cilantro and make the pickled onions if desired. Just add the eggs before baking.

testing notes
The biggest discovery in testing was that corn tortillas work, and flour doesn't. Flour doesn't crisp the same way. The second was in the storage of it. This dish is best right away because when stored in the fridge, the yolks form a hard shell over top that does not reheat pleasantly.

Ingredients
- 6 small 6-inch corn tortillas
- 16 oz refried black beans (1 can)
- 12 large eggs
to serve
- 1 cup plain Greek yogurt
- 1 avocado (sliced (optional))
- 1 cup salsa (whatever you love!)
- ½ cup cotija cheese (crumbled)
- fresh cilantro (chopped)
- salt and pepper (to taste)
- lime wedges

Instructions
- Preheat oven to 425F. Spray a half sheet tray lightly with cooking spray. Place the 6 small 6-inch corn tortillas in a single layer, overlapping a bit so it all holds together.
- Spread a generous layer of 16 oz refried black beans onto each tortilla. Press the back of a spoon firmly into the center of each to create 12 (2 on each tortilla) deep wells for the eggs.
- Crack the 12 large eggs into each well on each tortilla. Season lightly with salt and pepper.
- Bake for 12-15 minutes, checking at 12 minutes. Egg whites should be fully set and opaque; yolks should still jiggle slightly when you move the pan.
- Remove from oven. Top each serving with a generous dollop of Greek yogurt, avocado slices, salsa, cotija cheese, and fresh cilantro. Serve immediately wth a squeeze of lime juice.

Oh my goodness! This is definitely going to be a new go to for my family! I made a last minute decision to make it with ingredients that I had on hand and it is a wonderfully forgiving recipe.
Swapped the refried black beans with regular refried pinto beans, no cotija, so a little sprinkle of shredded cheddar was perfect.
My only problem was I cut the recipe in half in case someone didn’t like it. That was a mistake. It was fine in seconds and everyone wanted more. Perfect throw together breakfast to feed the family!!
