Here’s the thing that really grinds my gears about protein desserts. They are typically quick to make (which I like), but they prioritize lots and lots of protein over taste. And if you don’t like the taste, you’re not going to eat it. Therefore, it defeats the purpose of a protein dessert to eat more protein.
Greek yogurt and peanut butter powder are common culprits. And while they have their place in high protein recipes, it’s not in brownie batter. So now that I’ve vented to you about my issues with edible brownie batter let me tell you about my protein brownie batter recipe. And PS, if you want the cooked thing, you gotta try this extra fudgy protein brownie in a mug!

why this protein brownie batter will make you do the happy food dance

- No-bake desserts are perfect for that late-night sweet tooth or as an easy dip to whip up. In fact, I decided to make this last minute to serve with fruit at our son’s birthday party!
- The perfect texture that seriously is just like Ghiradelli. And I did about 6 rounds of testing just to make sure!

- The chocolate: To make this edible brownie batter ultra-rich, we need both chocolate chips and cocoa powder! I use dairy-free chocolate chips or Lilly’s sugar-free chocolate chips.
- The fat & sugar: Brownies are brownies because of their high fat and sugar ratio to flour. To emulate this in the protein batter, we will use avocado oil and powdered sugar.
- The protein: I like to use egg white vanilla protein powder because it’s the best tasting and dairy-free. Check out our post all abut protein to learn more about different options if you don't like protein powder.
variations & substitutions
All substitutions are a 1:1 substitute unless otherwise noted.
- Chocolate chips —> your favorite chocolate chips: any chocolate chips you like will work. I recommend semi-sweet but you can do milk chocolate or even melting chocolate chunks too.
- Powdered sugar —> sugar-free substitute: You can use a powdered sugar replacement like Swerve but I don’t recommend using granulated sugar or a liquid sweetener because it messes with the texture. Just me, I tried!
- Avocado oil —> butter: You can use melted butter or margarine in place of the avocado oil. Coconut oil works too as long as you don’t mind the taste of coconut. Do not use olive oil - the flavor is too intense.
- Protein powder: Your favorite vanilla protein powder (whey protein, egg white, or plant based) will work great. Just make sure you like the taste of it, because you will taste the protein in a no-bake dessert. Like edible protein batter or dough, try this high protein edible cookie dough!

How To Enjoy Protein Brownie Batter
- Eat it raw: I mean that’s what edible brownie batter is for right??
- As a dip: I love dipping strawberries, graham crackers, and bananas into this brownie batter. It makes a great dip on a large dessert charcuterie board, especially because you don’t need to worry about keeping it cold.
- As a topping for a yogurt bowl, smoothie bowl, on a milkshake or protein smoothie, or on pudding for a protein boost!
- As a filling inside a cake or cupcake. Or, it can even be a frosting on top!
- As a mix in with Greek yogurt or blended with cottage cheese.

storage tips
Room Temperature
This brownie batter can be stored at room temperature for up to 3 days because it contains all shelf-stable ingredients. I prefer to store it at room temperature because it stays soft.
Fridge
You can store the batter in the fridge but it will get hard, like becomes a solid block. You’ll need to microwave or at least let it come to room temperature to remelt the chocolate chips. I should note that you can eat it straight from the fridge and it actually makes a really great chocolate chunk bar, just it’s not brownie batter any longer.

Edible Protein Brownie Batter (better than Ghirardelli!)
Equipment
- 1 small microwave safe bowl or mug
Ingredients
- ½ cup chocolate chips (semi-sweet or dark)
- ¼ cup avocado oil
- ⅓ c powdered sugar
- ¼ cup cocoa powder (ultra dark preferred )
- ¼ cup vanilla protein powder (egg white, whey, or plant based is fine)
- ⅛ teaspoon salt

Instructions
- Melt the ½ cup chocolate chips and ¼ cup avocado oil (reserve a few chocolate chips for later) in the microwave in 30 second bursts. Stir in between until a smooth mixture forms. It should only take 30-60 seconds and be careful not to burn the chocolate.
- Stir in the ⅓ c powdered sugar, ¼ cup cocoa powder, ¼ cup vanilla protein powder, and ⅛ teaspoon salt until a batter forms. Then stir in your remaining chocolate chips.Enjoy on it's own, as a dip, as a topping, or as a filling!
