Chicken Sausage Breakfast Sandwiches are a meal preppers gold mine. They are made with juicy chicken sausage, bright bell peppers, spicy pepper jack cheese, and toasted English muffins. Plus, with only 10 minutes of prep and 20 minutes of bake time, these sandwiches don’t require your whole weekend to prep breakfast for the week!

Because I work long hours outside in the summer, I have to have breakfast, lunch, and dinner ready to go for the week. I often will prepare breakfast burritos but they are pretty time intensive. That is where these freezer breakfast sandwiches come in because they are ready in 30 minutes and most of that time the egg bake portion is in the oven, meaning hands-off for me!

Not only are these sandwiches super quick but they are packed with flavor. You may be thinking “flavor, oh so lots of spices” but that is not the case. I have a hard time using spices in recipes because they always end in a kitchen mess. Maybe that’s just my problem, but if you also have issues with using multiple different spices then these sandwiches are for you. Chicken sausage is how I pack in more flavor without having to add spices!

The only other ingredients you need for this recipe are English muffins, eggs, bell pepper, pepper jack, and our crazy addictive and delicious Chipotle Southwest Sauce!

Ingredients and Substitutions

All substitutions are a 1:1 substitute unless otherwise noted.

 

Chicken Sausage: Sausage is how you can pack a recipe with natural flavors without adding lots of spices. We used frozen chicken breakfast sausage that was defrosted.

Substitutions: Any type of sausage or sausage patty can be used, such as chicken sausage patties instead of sausage links because they should all get their sausage flavor from spices mixed into the meat. Also, pork sausage, turkey sausage, or a plant-based alternative can be used. You can also fry ground chicken if you prefer. Some have added sugar, like brown sugar and maple syrup, so be sure to check the ingredients for your dietary needs. If using a plain chicken sausage, feel free to add 1 tablespoon of garlic powder, black pepper, onion powder, red pepper flakes, or another seasoning.

 

Eggs: Eggs are what hold everything together. Plus they have 6 grams of protein per egg to keep you full all day!

Substitutions: You could try using a plant-based egg alternative but we have not tested it. Fluffy egg whites would also work great!

 

English Muffins: The blanket for this yummy little sandwich!

Substitutions: Sourdough bread, whole wheat muffins, croissant, or your favorite bread can be used. It is also fun to make these with mini bagels for little sandwiches that are great for a snack or for kids!

 

Red Bell Pepper: Bell pepper adds a little crunch, color, and sweetness to the egg mixture.

Substitutions: Any bell pepper can be used or you can use a poblano pepper. White onion or thinly sliced sweet potatoes could also be a substitute. Bell peppers can be omitted altogether if desired.

 

Milk: This adds that little bit of creaminess to the eggs that’s essential to any good scrambled egg. We used unsweetened oat milk.

Substitutions: Feel free to use any unsweetened milk or plant-based milk.

 

Pepper Jack Cheese: Every good sandwich has a gooey cheese pull and we love adding the spice of the paper jack with this cheese pull.

Substitutions: Cheddar cheese, mozzarella, and American cheese are all good substitution options.

 

Chipotle Sauce: This is one of my absolute favorite recipes that I have been enjoying on everything, I kid you not, everything! It just takes it to the next level. But, of course, you could always buy store-bought chipotle sauce.

Substitutions: There are many great substitution options if you’re looking for a different flavor. Mayonnaise, guacamole, sriracha sauce, or whatever your heart desires!

 

How to Make this – Step by Step

Step one: Turn on the oven to 350 degrees and thaw the chicken sausage if needed. Dice the bell pepper and chicken sausage.

 

Step two: Sauté the bell peppers and chicken sausage in a splash of olive oil over medium heat in a nonstick skillet until the bell pepper has softened. In a hurry? Feel free to skip sautéing these and simply mix the eggs, milk, sausage, and bell pepper together in a large bowl and then bake

 

Step three: While those are cooking, whisk together the eggs and milk. Add the sausage and bell pepper mix to the egg mixture and stir to coat evenly.

Step four: Transfer egg mixture to a non-stick or parchment paper lined 9″x13″ sheet tray. The egg bake should be between a half-inch and an inch thick.

Step five: Bake for 20 minutes or until the eggs are just barely set. They will continue to cook after being removed from the oven so it is ok if they still jiggle a bit.

 

Step six: While the eggs bake, toast the English muffins and prepare the foil by cutting 8 even squares that are about 6” x 6”.

 

Step seven: Once the eggs are removed from the oven, cut into 8 even slices and begin assembling the sandwiches. Place the English muffin bottom, then an egg slice, then pepper jack cheese, then chipotle sauce, and finally the top bun of the toasty English muffin. Wrap tightly in foil, write the date on it, and store in the fridge or freezer. You could also top these and freeze them with avocado, a tomato slice, or other yummy topping!

Is chicken sausage raw when bought?

Most frozen chicken sausage links bought in the grocery store are cooked. However, always double-check the packaging to see if the chicken sausage you buy is raw or cooked, and be sure to follow the recommended cooking instructions on the box.

 

What is the best way to cook chicken sausage?

Frozen chicken sausages are best cooked in a frying pan on the stove.

 

How do you keep frozen breakfast sandwiches from getting soggy?

To keep these sandwiches crisp when reheating there are a couple of tricks.

  1. Toast the muffins before freezing to create a tougher barrier against moisture when reheating.
  2. Line the plate with a paper towel when microwaving to help absorb any liquid that is released.
  3. Reheat in the oven, air fryer, or toaster oven with the top muffin removed. This helps air circulate better to avoid the soggy bottom. Check out our details below for exactly how to do this!

 

Can I use a different size pan?

Yes! When using a smaller pan, pay attention to the depth of the egg mixture. For example, if the pan is smaller but you are using the same amount of egg mixture, the bake time will need to be doubled because it is twice as thick. If you are using a smaller pan, but also half of the batter, then the bake time is likely the same. The bake time we use is based on the 9×13 pan with a thickness of 1 inch.

Want to Save it for Later? Here’s how!

These are perfect for saving for late! In fact, we recommend it.

To save for later, freeze them tightly wrapped in foil. They will keep for up to 3 months in the freezer. These do not keep well in the refrigerator because they get soggy. When ready to eat, read below for how to reheat these meal prep sandwiches!

To reheat from the fridge: Simply microwave for 1 minute or until heated through or take the top piece of the muffin off and place the egg and muffin side in the toaster oven for 8 minutes. Then toast the other half of the English muffin for 2 more minutes and reassemble!

To reheat from frozen: This gets a little tricky. You can microwave for 2 minutes with the frozen sandwich sitting on a paper towel to help absorb any liquid and prevent a soggy bottom. But our preferred way is to microwave one for 30 seconds and then remove the top muffin and place the egg side in the air fryer (egg side up), oven, or toaster oven at 350 degrees. Toast for 8 minutes like this, then add in the top muffin piece and continue to toast for 2 minutes. Reassemble and enjoy!

 

Fun Fact

Despite their name, English muffins are not typical in England. There is an English counterpart, however, called a crumpet which is more cake like and less muffin like. Our American English muffins (oxymoron, I know) are known for their nooks and crannies and the brand, Thomas, is the best of the best for creating muffins with tons of nooks and crannies. They are so afraid that their recipe may get out, that only a handful of executives (like 7) within the company even know the recipe. (source)

Ingredients

  • 8 english muffins
  • 1 bell pepper diced
  • 1.5 cups chicken sausage
  • 12 eggs
  • 1/4 cup milk
  • 8 slices pepperjack cheese
  • 1/2 cup chipotle sauce

Instructions

  • Dice bell peppers and chicken sausage. Thaw sausage if needed. Preheat oven to 350 degrees. Grease a 9x13 inch baking pan.
  • Saute peppers and chicken sausage till golden brown.
  • While those cook, add eggs and milk to bowl and whisk together.
  • Transfer bell peppers and sausage to egg mixture and mix together, then transfer to 9x13 inch pan.
  • Bake for 20 minutes or until eggs are just set. While the egg bakes, toast the English muffins.
  • After done baking, let the egg bake cool for 5 minutes, then cut into 8 even pieces.
  • Assemble the sandwiches by layering the bottom English muffin slice, egg slice, pepper jack cheese, chipotle sauce (spread on top muffin piece), and top English muffin slice.
