I learned the hard way that adding peppermint extract to your chocolate before mixing it with the yogurt will cause it to seize up. It's the strangest effect, but just wait to add the peppermint (or any extract) until after mixing the chocolate with the yogurt.

This recipe couldn't be simpler and doesn't require anything fancy like coconut oil, oat flour, or brown rice syrup (where do you even get that?).
- Dark chocolate: You can use sugar-free or regular, but it must be dark chocolate! Milk chocolate will not result in a smooth setup.
- Greek yogurt: Non-fat or whole milk will both work just fine. Just be sure to let it sit out to come to room temperature before mixing with the chocolate. Use the rest of your tub to make another of our Greek yogurt dessert ideas.
- Extract: I love peppermint, but vanilla works too.

how to store it
This fudge is best kept in the fridge. Store it in an airtight container for up to 1 week. It stores well in the freezer too, but it need to sit out for 10-15 minutes to soften before eating.

Chocolate Protein Fudge (made with Greek yogurt)
Ingredients
- ⅛ teaspoon peppermint or vanilla extract
- 1 cup dark chocolate chips (milk will not work!! but sugar free will)
- ½ c plain or vanilla greek yogurt (any thick yogurt, fat level etc, will work)
- crushed white chocolate peppermint pretzels (for topping)

Instructions
- Set out your yogurt to come to room temperature. Melt the 1 cup dark chocolate chips in 30 second increments until it's melted.
- In a large bowl, mix together the room temperature ½ c plain or vanilla greek yogurt and melted chocolate. Work quickly so the chocolate doesn't solidify from the cold yogurt. Also important why the yogurt isn't straight out of the fridge!
- Stir in your ⅛ teaspoon peppermint or vanilla extract. Line a 7x4 tubberware container with parchment paper. Pour the mixture into the container and top with crushed white chocolate peppermint pretzels. Leave in the freezer to set without a lid on. Leave it for at least 3 hours or until set.
- Slice into 9 squares and enjoy!

How much is the chocolate in grams poppet? Would be helpful to know for the yoghurt too though easier to get a bit closer with a cup - not so easy when you don't know how big the pieces of chocolate are that go in that cup of yours!
Sorry, I just don't have the capacity as a one man recipe team to create recipes in 2 units! The chocolate is chocolate chips. If you have a chocolate bar, roughly chop it up before adding to the measuring cup. It doesn't need to be exact for this recipe to work 🙂
