Chocolate Protein Fudge (made with Greek yogurt)

You literally only need 2 main ingredients to make this chocolate protein fudge, and then your topping of choice. It was tested many times (with a few fails) to get that perfectly creamy, smooth bite. You're going to be shocked at how easy and delicious this recipe is!

Ingredients

  • teaspoon peppermint or vanilla extract
  • 1 cup dark chocolate chips milk will not work!! but sugar free will
  • ½ c plain or vanilla greek yogurt any thick yogurt, fat level etc, will work
  • crushed white chocolate peppermint pretzels for topping

Instructions

  • Set out your yogurt to come to room temperature. Melt the 1 cup dark chocolate chips in 30 second increments until it's melted.
  • In a large bowl, mix together the room temperature ½ c plain or vanilla greek yogurt and melted chocolate. Work quickly so the chocolate doesn't solidify from the cold yogurt. Also important why the yogurt isn't straight out of the fridge!
  • Stir in your ⅛ teaspoon peppermint or vanilla extract. Line a 7x4 tubberware container with parchment paper. Pour the mixture into the container and top with crushed white chocolate peppermint pretzels. Leave in the freezer to set without a lid on. Leave it for at least 3 hours or until set.
  • Slice into 9 squares and enjoy!

how to store it
This fudge is best kept in the freezer. Store it in an airtight container for up to 3 months.
Do not use milk chocolate; it will not set up properly. 
Types of yogurt that work: This can be whole milk, low fat, or similar, even plant based as long as it's a very thick and creamy yogurt. Painterland is my favorite.
Nutrition uses low fat greek yogurt and doesn't include topping.
