One Hour, Four Recipes: My Real-Food High-Protein Meal Prep
This is my go to meal prep for winter, sick season, and when I just can't be bothered to make any more decisions. Four recipes, one grocery trip, and everything's prepped and in the fridge in under an hour!
Nothing fancy and everything ready in under an hour, just the basics for when you open the fridge and need food. Just Greek yogurt, peanut butter, quinoa, chickpeas, fresh produce - the stuff you already know how to work with. Also, super easy to make dairy free and naturally gluten free 🙂
the plan
⭐️ High-Protein Green Goddess Salad - lunch all week. Zesty, herby, and it holds up in the fridge for days.
⭐️ Immunity Shots - blend once, pour into little jars, grab one every morning.
⭐️ Peanut Butter Protein Balls - the afternoon snack that actually tastes like a treat.
⭐️ Greek Yogurt Mango Chia Seed Pudding - be sure to see my notes below for making the mango version!
how the hour goes
Start the chia pudding first, so it has time to set. Blend the immunity shots while the quinoa cooks. Assemble the salad, then use a stand mixer or hand mixer to make the protein balls and boom! You're done!
grab the shopping list
I put every ingredient for all four recipes on one printable page, organized by section of the store. Also, notes are included for making the chia seed pudding into my favorite mango version 🙂
a few prep notes
- Keep the avocado separate from the salad until you're ready to eat
- Protein balls freeze beautifully, so I always double the batch
- Chia pudding is best by day 2 and good through day 5
For the mango chia seed pudding: swap half the greek yogurt for frozen or fresh mango and add 1 cup of soy milk. Blend it all together except the chia seeds, then stir them in. Optional to add a scoop of vanilla protein powder if desired. Top with fresh mango or fruit of choice 🙂
One hour on Sunday, and the week is handled! Whoop whoop!
