use more chocolate than you think
Dipping these in chocolate can be the most challenging because the inside is cold and frozen, but the chocolate is warm. To keep it easy, use more chocolate than you will likely use to make sure it's always deep enough to dip the smores clusters fully in chocolate.
key ingredients & swaps
All substitutions are a 1:1 substitute unless otherwise noted. See the recipe card for quantities.
- The inside: Mix together non-fat plain Greek yogurt (or Skyr yogurt), maple syrup, and cocoa powder for the sweet filling. Honey or agave works too. If you have leftover yogurt, check out our other dessert recipes with Greek yogurt!
- Graham crackers and marshmallows: Of course, we need these for s'mores! Use gluten-free as needed.
- Chocolate coating: All this is is melted semi-sweet chocolate chips and a bit of coconut oil. The coconut oil helps the chocolate not solidify, and instead snaps when frozen and bitten into.

salt! always salt!
Salt makes things taste more like themselves, so always finish with flaky sea salt. Add it right after dipping in the chocolate (before freezing).

step by step: tips to nail this recipe every time
- Mix the yogurt mixture first, then fold in the graham crackers and marshmallows. This makes sure you don't have lumps of raw cocoa powder.
- A silicon muffin mold is gold here! And makes it so easy to freeze them in preportioned sizes and pop out easily when frozen. If you don't have one, line your muffin tin with foil liners.
- Use a deep bowl to ensure you always have enough space to dip into the chocolate.
- Line with parchment paper if not using silicon molds. This ensures the chocolate won't stick to your pan.

Instructions
- Using a heavy object, roughly crush the 3 graham crackers. Grab a silicone muffin tin or line a metal muffin tin with liners.
- Mix the 1 cup Greek yogurt, 4 tablespoon maple syrup, 2 tablespoon cocoa powder, and 2 teaspoon vanilla extract in a large bowl. Add extra maple syrup if desired.
- Stir in the ¼ cup mini marshmallows and cracker bits with the yogurt mixture. Scoop the mixture evenly into the prepared muffin tin. It should make 12 clusters.
- Freeze these for at least an hour.
- Once frozen, melt the chocolate chips and coconut oil in a bowl in the microwave. Do this in 30-second increments and while stirring in between. Alternatively, you can melt the chocolate in a small pan on the stove on low heat.
- Use a fork to dip each cluster into the melted chocolate mixture, then return to the prepared muffin tin or mold.
- Return to the freezer for 15-30 minutes or until the chocolate coating shell has set. Then enjoy! You can also transfer to a freezer-safe, airtight container and keep it in the freezer for up to 3 months.
