Ingredients

Chocolate coating

Instructions

  • Using a heavy object, roughly crush the 3 graham crackers. Grab a silicone muffin tin or line a metal muffin tin with liners.
  • Mix the 1 cup Greek yogurt, 4 tablespoon maple syrup, 2 tablespoon cocoa powder, and 2 teaspoon vanilla extract in a large bowl. Add extra maple syrup if desired.
  • Stir in the ¼ cup mini marshmallows and cracker bits with the yogurt mixture. Scoop the mixture evenly into the prepared muffin tin. It should make 12 clusters.
  • Freeze these for at least an hour.
  • Once frozen, melt the chocolate chips and coconut oil in a bowl in the microwave. Do this in 30-second increments and while stirring in between. Alternatively, you can melt the chocolate in a small pan on the stove on low heat.
  • Use a fork to dip each cluster into the melted chocolate mixture, then return to the prepared muffin tin or mold.
  • Return to the freezer for 15-30 minutes or until the chocolate coating shell has set. Then enjoy! You can also transfer to a freezer-safe, airtight container and keep it in the freezer for up to 3 months.
