So when I saw this viral pizza wrap pop up on social media, I knew we were destined for it! It's a great high-protein low-calorie lunch, and it is so easy to meal prep a few wraps to save for later!

We don't want it to burn, so watch it closely towards the end of the bake time. It should just be golden brown around the edges and bubbly for a crunchy pepperoni wrap.

key ingredients & swaps
All substitutions are a 1:1 substitute unless otherwise noted. See the recipe card for quantities.
- Mozzarella: This is core to the wrap! Feel free to use low-fat or regular.
- Pepperoni slices: I like to use turkey pepperoni from Applegate to keep the protein high and fat lower since cheese has no shortage of fat 🤣.
- The filling: Ok, this can be what you like, but I'm going for an Italian sub vibe with Calabrian chilies, basil, arugula, ham, and peppercinis.

step by step: tips to nail this recipe every time
- Spread your cheese evenly on the baking sheet, without gaps. Roughly shape it into a rectangle. This ensures that as it melts, it all holds together.
- Dab with a paper towel if you use whole milk mozzarella cheese, which releases fat.
- Let it cool for 15 minutes before rolling it all up with the filling.

Instructions
- Preheat the oven to 350 degrees. Line a half or quarter sheet tray with parchment paper.
- Sprinkle the ½ c shredded mozzarella evenly over the middle and shape it into a square. Lay the 16 slices mini pepperoni over the top of the cheese, spaced evenly apart.
- Bake for 15 minutes or until golden brown. Remove and let cool 10-15 minutes before using as a wrap. If you use full-fat cheese, you may want to dab off any excess fat from the top.
- Once cooled down, peel off the parchment paper and then fill with all your fillings! Spread the 1 teaspoon calabrian chilis onto one half and just layer everything else. Finish with a drizzle of honey, cut in half, and enjoy! Or feel free to add some spicy ranch and pickles!
