ingredient notes & substitutions
All substitutions are a 1:1 substitute unless otherwise noted. See the recipe card for full quantities.
- Nutella: This is a must for the perfect texture and sweetness (just like in our nutella tartlets). For an alternative, you can use any other similar chocolate nut butter. Sun butter, peanut butter, almond, granola butter, or any other chocolate one you like.
- Dairy: You'll need 2% low-fat cottage cheese and your milk of choice. If dairy isn't your thing, you can try our dairy-free protein chocolate mousse that's made with eggs!
- Vanilla & Salt: Both of these ingredients help to amplify the sweetness and chocolate flavor without actually adding more sugar.
high protein ingredient spotlight: cottage cheese
Cottage cheese is a versatile, nutritious ingredient that adds creamy texture, mild tangy flavor, and a protein-packed boost to both sweet and savory dishes. When blended it works beautifully in dips like our special In-N-Out sauce, while its small curds can add texture and cheesy goodness to cottage cheese meatballs.
It can replace ricotta in pasta, add moisture to baked goods like cottage cheese brownies, or serve as a creamy sauce base without heavy cream. With high-quality protein, calcium, and essential nutrients, all while being low in calories, cottage cheese is a smart, delicious way to elevate your favorite recipes.

Instructions
- Blend all ingredients in a high-powered blender. You'll need to scrape the sides down and blend for a solid 1-2 minutes until no curds remain. An important note! We've had a few readers make this, and the first time, it doesn't go well because their cottage cheese has a lot of watery liquid at the top. Cottage cheese varies in this regard, so pouring off as much of that liquid as possible is important. When I use Nancy's, Good Culture, or Kalona I don't need to remove the excess liquid but when I use Target brand or Walmart brand, I need to pour off the liquid.
- Store in the fridge for up to 4 days or enjoy right away!

So nice and sweet. I will add more cottage cheese, or not add the 2 tablespoons of milk to help make it more thick next time.
