If you crave something sweet and quick to make, then you've probably attempted to make a mug cake and been disappointed. Unless you tried making this 3-ingredient chocolate banana mug cake 😉. But when you need a foolproof, well-tested microwave brownie that also happens to be high protein - well, that's where this recipe comes in.
not to be dramatic, but this is the best brownie you will ever taste
Not just the best mug brownie or the best high-protein brownie, but the best brownie, period.
- It's a quarter cup of everything, making it very easy to make. You know the saying "keep it simple stupid", that's what this brownie does. Sweet, simple, and perfect.
- Make 1 or 2, depending on how sharing you're feeling. I've included microwave times for both!
- Naturally gluten-free and easily dairy-free thanks to almond flour and no protein powder!
you don't need much
- Chocolate Chips and Coconut Oil: Melting these together is the key to ultra-fudgy brownies. Feel free to use sugar-free or vegan chocolate chips.
- Dry Ingredients: You'll also need coconut sugar, almond flour, and salt. Brown sugar will work in place of coconut sugar. You can also add unflavored collagen if you want.
- Wet Ingredients: To bring it all together, you just need an egg and some vanilla extract or vanilla paste.

ok, so let's make it already
- Melt the chocolate chips and oil in the microwave.
- Mix them together with the other ingredients in a bowl then split the batter between two mugs.
- Microwave each mug for 1 minute 15 seconds (maybe up to 1 minute 30 seconds). Let cool before enjoying!

brownie for one
If you don't want to share this protein mug brownie, just add all the batter to one large mug. Microwave it for 2-3 minutes until just set in the center.
so, so many tests
This recipe was tested many times, over a dozen to be exact. Here's what I learned:
- Oat flour and all purpose don't work: These both cause the recipe to be too cakey and not a fudgy brownie.
- Melting chocolate chips: This is seriously a game-changer! All great brownies use melted chocolate, just trust me.

Recipe

Fudgey High Protein Brownie In A Mug
Ingredients
- ¼ cup semi-sweet chocolate chips (sugar free or vegan is fine)
- 3 tablespoon coconut oil
- ¼ c coconut sugar (or brown sugar)
- ¼ c almond flour
- Pinch of salt
- Splash of vanilla
- 1 egg
- ¼ cup unflavored collagen peptides (optional)

Instructions
- Add ¼ cup semi-sweet chocolate chips and 3 tablespoon coconut oil to a microwave safe bowl and microwave for 30 seconds. Mix together melted oil and chocolate chips. It's ok if the chocolate isn't totally melted.
- To the same bowl, add the ¼ c coconut sugar, ¼ c almond flour, Pinch of salt, a Splash of vanilla, and 1 egg. If you're using the collagen, you can add that too. Mix well to combine.
- Split the batter between 2 mugs and microwave each one for 1 minute and 15 seconds (give or take 15 seconds, depending on how powerful your microwave is). Let it cool for a few minutes before digging in.To make it in one mug (a single-serve brownie), use a wider mug and microwave it for 2-3 minutes or until just set in the center.

Easy recipe, good taste, but it was just SO oily. I was eating the brownie and there was so much coconut oil that it was looking at the bottom of the mug. It made the whole thing pretty unappetizing.
