This No Churn Vanilla Ice Cream Recipe without Heavy Cream is made with just a few simple ingredients! It’s vegan, gluten free, does not require an ice cream maker, and is ready in 5 minutes in the blender! It’s so creamy and sweet, my grandma thought it was pudding I froze… (I like to think of it as a classic custard base ice cream) and it’s so easy to make!

How to make No Churn Vanilla Ice Cream:
- Blend it up! Add all ingredients except the jam to a high speed blender or food processor and blend until smooth and a fluffy whipped cream like mixture forms. Approximately 1-2 minutes.
- Freeze. Pour mixture into a bread tin or freezer safe and airtight container. Add the apricot jam and swirl into the mixture. Freeze for at least 5 hours or overnight. You can also take this from the freezer 2 hours in and add additional jam swirled on top.
- Enjoy! You may have to let it sit out for a couple minutes to soften. This is definitely classified as hard ice cream, not a soft serve.

This is great to make a large batch to keep in the freezer for the week or to have when all the friends and family show up to the house but I wouldn’t take it to work with you for lunch in the cooler… Being it’s such an amazing ice cream, though, we highly recommend making it for friends!
Where can I find non-dairy whipping cream and condensed milk? I discovered these awesome finds on a whim and have never looked back! Silk Heavy Whipping Cream can be found at Target and Walmart in the refrigerated milk section. Sweetened Condensed Coconut Milk can be found at Walmart, Whole Foods, and Amazon. These are all probably available elsewhere too, these are just the places I know they are sold at. You can also make your own in the Instant pot, on the stove top, or in the slow cooker like this recipe by Eating Bird Food.
What makes this recipe so delicious and creamy? I know, that was kind of a lob pitch question. But, I wanted a section to reiterate just how easy it is to have AMAZING dairy free ice cream with a few simple ingredients. First - Silk Whipping Cream is an unreal creation. It whips and tastes like regular whipping cream. Next - Sweetened Condensed Coconut Milk is an amazing development. Not the healthiest for you, but I keep a can in the fridge for my afternoon coffee and will never look back. Finally - Vanilla, Cinnamon, and Apricot Jam. I use my mothers apricot pineapple jam made from apricots from our tree and with honey as a sweetener. Using a homemade jam is obviously preferred but not realistic. So, try to opt for a lightly sweetened or naturally sweetened apricot jam mixed with some other sour or tangy fruit. The cinnamon and vanilla are both from our friends at Origine Paradise Provisions. They sell sustainable sourced spices and flavorings from hand picked farmers. We are SO happy to have partnered with them and could not recommend them enough. Great quality ingredients create great food!
No Churn Vanilla Ice Cream Substitution Options
All substitution options are a 1:1 substitution unless noted otherwise.
Silk Non-Dairy Heavy Whipping Cream: Regular whipping cream will work. Other non-dairy whipping creams may work but have not been tested.
Sweetened Condensed Coconut Milk: Any non-dairy sweetened condensed milk will work or traditional, dairy sweetened condensed milk.
Cinnamon and Vanilla: Any cinnamon or vanilla can be used or these can be omitted. Vanilla beans, vanilla bean paste, or vanilla extract can be used also. Cinnamon extract can also be used.
Apricot Jam: Any jam can be used or this can be left out for a delicious vanilla no churn ice cream without heavy cream. Without jam, you would still have yummy homemade vanilla ice cream! This is such an easy homemade ice cream recipe that makes the perfect ice cream base for all different flavors!

Vanilla is the only edible fruit in the orchid family and there are over 150 varieties of vanilla. With so many types of vanilla, even more interesting, no two vanilla pods will produce the same flavor, similar to grapes for wine. Vanilla is mostly used in the dairy industry and vanilla is the most popular flavor of ice cream (big surprise!). In the 1700’s Thomas Jefferson was one of the first people to bring vanilla to America, bringing vanilla beans back after a tenure in. Although it is often thought of as a sweet flavor, vanilla can be used in small quantities to cut the acidity of tomato based dishes and enhance the flavor of fruits and vegetables in dishes. Ingredients
- 16 oz Non-Dairy Heavy Whipping Cream
- 11.6 oz sweetened condensed coconut milk
- 2 teaspoon vanilla extract
- 1 teaspoon cinnamon
- ½ cup apricot jam
Instructions
- Add all ingredients, except apricot jam, to a blender or food processor.
- Blend until smooth and fluffy, usually 1-2 minutes
- Pour into freezer safe container, like a bread pan
- Add apricot jam in small spoonfuls and swirl into the cream
- Freeze for at least 5 hours or overnight
