I think the first recipe I ever made myself was a "frappuccino". I say it in quotes because it definitely didn't have coffee in it! Nowadays, I still love them but I rarely have them because they are like a full meal's worth of calories. Which is fine - but I'd rather eat them 🤪.
So, after a few tests, I realized the key to perfecting a protein frappuccino without protein powder was tofu and soy milk! These add protein, keep it creamy, but don't impart any flavor on this dairy-free frappuccino. So we get all that Starbucks goodness but a fraction of the calories (and cost) and 13g of protein!

do you taste the tofu?
No, you absolutely do not taste the tofu! Trust me on this one. Silken tofu blends completely smooth and adds creamy protein without any tofu taste. It's the secret to getting that thick, frappuccino texture without dairy or protein powder. You literally cannot taste it.

key ingredients & swaps
All substitutions are a 1:1 substitute unless otherwise noted. See the recipe card for quantities.
- Silken tofu: This is key-regular firm tofu won't work. Silken tofu blends smoothly and is creamy like Greek yogurt would be in a smoothie. It adds 5g of protein and makes the tofu frappuccino thick without any weird texture or taste.
- Soy milk: Higher protein than other plant milks (7-8g per cup). You can use almond or oat milk, but you'll lose a good chunk of protein.
- Instant coffee: Quick and dissolves easily. Use 2 teaspoons for a strong coffee flavor, or add more if you want it bolder.
- Cocoa powder: Unsweetened cocoa gives you that mocha chocolate flavor. Don't skip this!
- Peanut butter powder: Adds the most subtle nutty richness and extra protein (about 2g) without the fat. PB2 or any peanut butter powder brand works. You can skip this if you don't have it, but it really makes the drink special.
- Allulose syrup: A zero-calorie sweetener that tastes just like regular sugar syrup. You can use regular simple syrup, maple syrup, honey, or any sweetener you like.
- Chocolate syrup (for drizzle): Optional, but makes it feel like a real Starbucks drink! Mix allulose syrup with cocoa powder for a sugar-free version, or use store-bought chocolate syrup.

using a shot of espresso or coffee
You can also use a shot of espresso or cold brew instead for this protein coffee shake. But, you'll need to reduce the soy milk or add more iceto make up for the extra liquid. One shot for your frappe, one for dipping a high protein blueberry muffin or protein coffee cake in.



step by step: tips to nail this recipe every time
- No need to press the tofu: Silken tofu is high in moisture, which is what we want for a vegan mocha frappuccino.
- Add ice gradually. Start with less ice and add more if you want it thicker. Too much ice at once can make it watery.
- Taste and adjust. Everyone's sweetness preference is different. Start with 1.5 tablespoon allulose and add more if needed.
- Make the chocolate drizzle. Mix 1 tablespoon allulose syrup with 1 teaspoon cocoa powder. Drizzle inside your glass before pouring in the frappuccino for that Starbucks look.

can you make this ahead of time?
You can prep the tofu mixture (everything except ice) and store it in the fridge overnight. Blend with ice in the morning. Don't blend with ice ahead of time-it'll separate and get watery and no one wants that for a post workout coffee.

more fun flavors to try
- Vanilla frappuccino: Skip the cocoa powder and add 1 teaspoon vanilla extract. Use vanilla-flavored soy milk if you have it for another dairy-free protein drink.
- Caramel frappuccino: Replace allulose syrup with sugar-free caramel syrup (or regular caramel syrup). Skip the cocoa powder, and you'll have a healthy Starbucks copycat.
- Pumpkin spice frappuccino: Add 2 tablespoons pumpkin puree and ½ teaspoon pumpkin pie spice. Skip the cocoa powder.
- Extra thick version: Use only ½ cup soy milk and eat your sugar-free frappuccino with a spoon like a milkshake.
- Mocha chip: Add 1 tablespoon mini chocolate chips after blending.
can I use regular tofu instead of silken?
No-regular firm or extra-firm tofu has a grainier texture and won't blend smoothly. Silken tofu is sold in aseptic packages (shelf-stable boxes) and has a custard-like texture. Look for it in the international aisle, not the refrigerated section.

Ingredients
For the frappuccino:
- ¼ cup silken tofu (about 60g)
- ¾ cup soy milk
- 2 teaspoon instant coffee
- 2.5 teaspoon cocoa powder
- 2 teaspoon peanut butter powder
- 1.5 tablespoon allulose syrup (or more to taste)
- 1 cup ice
For the chocolate drizzle (optional):
- 1 tablespoon allulose syrup
- 1 teaspoon cocoa powder

Instructions
- Make the chocolate drizzle (optional): Mix 1 tablespoon allulose syrup with 1 teaspoon cocoa powder. Drizzle inside your glass.
- Blend the base: Add silken tofu, soy milk, instant coffee, cocoa powder, peanut butter powder, and allulose syrup to a blender. Blend on high until completely smooth, about 30 seconds.
- Add ice: Add ice and blend again until thick and frappuccino-like, about 20-30 seconds. If it's too thin, add more ice. If too thick, add a splash more soy milk.
- Taste and adjust: Taste and add more allulose syrup if you want it sweeter.
- Serve: Pour into your drizzled glass and enjoy immediately!
