Pumpkin season is upon us, and that means one thing. Pumpkin is hard to find in store so if you have part of a can after making pumpkin waffles or pumpkin pancakes - don't toss it! Use it to make these protein pumpkin bagel bites.
inspired by my moody college days & favorite bagel shop
While I'm a very upbeat person who mostly despises sappy songs, I did have moody days in college. I would frequent the local bagel shop (and out east, they are the best of the best bagels) and buy myself a pumpkin French toast bagel sandwich. Yes, sweet and salty.
Then I proceed to drive into the woods to find fall colors and take moody pictures with my moody fall bagel, dark nails, and all. Anyway, enough about that time; what really matters is that the bagel with pumpkin, cinnamon, and sugar was next-level delicious.
This high-protein bagel bite version of my favorite bagel ever might possibly be better! Because - they pack in 7 grams of protein! And to make matters more exciting, I mix pumpkin cream cheese with plain Greek yogurt for an easy high-protein dip for said bagel bites.
I've had these almost nightly - no joke. I hope you get to enjoy them every night this fall, too!

what you'll need
- The dry ingredients: You'll need all-purpose flour, baking powder, and salt. You can swap the all-purpose flour and baking powder for self-rising flour.
- The wet ingredients: To bring the dough together, this recipe uses blended cottage cheese, pumpkin, and vanilla. Blended cottage cheese is really a star here since it can be used in place of heavy cream and butter in things like these bites and protein fudgsicles.
- The flavor: To add the spice, we'll need pumpkin pie spice, cinnamon, and vanilla.
- Toppings: For a nice golden brown top, these are brushed with a beaten egg. After they are baked, they'll be rolled in melted butter and a cinnamon sugar mixture.
- Dip: I love to enjoy these with a dip made of 1 tablespoon pumpkin cream cheese and 1 tablespoon plain Greek yogurt.

Even though this might seem like a lot of steps, it's really just mixing the dough, shaping it, and baking it.
- Blend together the pumpkin, cottage cheese, and vanilla until totally smooth and no curds remain.
- Mix together the dry ingredients in a large bowl. Then add the cottage cheese mixture and mix together, pressing the dry ingredients into the wet mixture until fully absorbed.
- Transfer to a floured surface and form a circle. If it's too wet, knead a bit more flour into it.
- Cut into 16 even triangles and form each one into a ball. Place on the air fryer tray or in the basket. Mix an egg and then brush each bagel bite with the egg wash.
- Air fry for 8-10 minutes or until golden brown and cooked through. It should sound hollow when tapped on. Meanwhile, mix together the cinnamon and sugar.
- Drop each bite into the melted butter briefly and then roll in cinnamon and sugar. To reduce the sugar, you can just brush the tops with butter and sprinkle cinnamon sugar on top.
- Serve them up hot with the pumpkin yogurt dip!

Ingredients
- 1 cup all purpose flour
- 3 teaspoon baking powder
- ½ teaspoon salt
- ¾ cup cottage cheese (2% low fat)
- 2 tablespoon pumpkin puree
- ½ teaspoon vanilla extract
- ½ teaspoon pumpkin pie spice
- ½ teaspoon cinnamon
- 1 egg (beaten)
- 2 teaspoon cinnamon
- ¼ cup cane sugar
- ¼ c melted butter
spiced yogurt dip
- ½ cup pumpkin cream cheese
- ½ cup plain greek yogurt (low fat 0%)

- Serve them up hot with the spiced yogurt dip!To make the dip, just mix together the ½ cup pumpkin cream cheese and ½ cup plain greek yogurt.

Notes
To bake the bagel bites, simply bake at 350 degrees for 15-17 minutes or until cooked through. Storage: These will keep in the fridge for up to 3 days but they do start to get stale. I'd recommend freezing them in an airtight container. They freeze well for 3 months. Reheat them in the air fryer, oven, or microwave. Flour substitute: You can swap the all purpose flour and baking powder with self rising flour.
