Blend together the ¾ cup cottage cheese, 2 tablespoon pumpkin puree, and ½ teaspoon vanilla extract until totally smooth and no curds remain.
Mix together the 1 cup all purpose flour, 3 teaspoon baking powder, ½ teaspoon salt, ½ teaspoon pumpkin pie spice, and ½ teaspoon cinnamon in a large bowl. Then add the cottage cheese mixture and mix together, pressing the dry ingredients into the wet mixture until fully absorbed.
Transfer to a floured surface and form a circle. If it's too wet, knead a bit more flour into it.
Cut into 16 even triangles and form each one into a ball. Place on the air fryer tray or in the basket. Mix 1 egg and then brush each bagel bite with the egg wash.
Air fry for 8-10 minutes at 350 degrees or until golden brown and cooked through. It should sound hollow when tapped on. Meanwhile, mix together the 2 teaspoon cinnamon and ¼ cup cane sugar.
Drop each bite into the ¼ c melted butter briefly and then roll in cinnamon and sugar. To reduce the sugar, you can just brush the tops with butter and sprinkle cinnamon sugar on top.
