I love pancakes for a 30g protein breakfast, but what I don't love is having to get out a lot of ingredients to make them. And while I love pancake mix and waffle mix, especially ones with clean ingredients, I like to make them better, like my 3-ingredient Greek yogurt pancakes, which adds yogurt for protein and fluffiness, and my pistachio protein pancakes, both of which are perfect pre-workout!
So for this Kodiak pancake recipe, I take protein pancake mix and amp it up with cottage cheese for protein and creaminess. And I add in more eggs to make them extra light and fluffy! Ingredients to Make Kodiak Pancakes Taste Better
All substitutions are a 1:1 substitute unless otherwise noted. See recipe card for quantities.
- Protein pancake mix: I've tested this recipe with Bisquick, Good and Gather (Target), Birch Benders Protein, Krusteaz protein, and Kodiak mix (the buttermilk power cakes one has whole grains) - all work great!
- The "amp up": You'll need cottage cheese (any kind will work) and eggs to make the protein pancakes. Greek yogurt also works in place of cottage cheese.
- Mix in's: You can stir in chocolate chips, blueberries (some for this and some for high protein blueberry muffins), bananas, nuts, vanilla extract or paste, or even sprinkles to these pancakes.

- Gluten-free: Feel free to use a gluten-free pancake mix like Birch Bender. This mix is great for making high-protein recipes accessible to every dietary need!
- Dairy-free: You can use a plant-based yogurt in place of cottage cheese and a vegan protein pancake mix to make this recipe dairy-free.
How to use Kodiak Pancake Mix to make fluffy, moist pancakes
- Add everything in the order noted to prevent having to stop and scrape down the sides too much.
- Use low to medium heat (not medium-high heat) and a non-stick pan to cook the pancakes for the best results.
- The first pancake is always a test. Evaluate and adjust the heat as needed on the griddle or pan.
- Look for bubbles! When you see them all over the surface of the pancakes, then it's time to flip!

My pancakes are burnt but not cooked through.
This happens when the pan is too hot. Simply reduce the heat and continue cooking.
I don't have a blender, can I mix them by hand?
Yes, I've made these by hand mixing the batter, but the cottage cheese curds make the texture a little bit lumpy. The cheese melts as it cooks, but not completely.

how to store & meal prep it
You can store these in the fridge for up to 7 days in an airtight container. But they do start to dry out after 4 days. Or, you can freeze them for up to 3 months. Reheat them on the stove or in the microwave. Perfect cold too if you take them on the go to every adventure!

Kodiak Pancake Recipe with Cottage Cheese - 34g of Protein!
Equipment
- 1 non-stick skillet
- 1 blender
Ingredients
- 1 cup Kodiak Protein Pancake Mix (like Kodiak Power Cakes Mix, protein Bisquick, or Birch benders - regular pancake mix works too)
- 4 eggs
- ½ cup cottage cheese (or greek yogurt - wouldn't need to blend this way)

Instructions
- Heat a skillet over low to medium heat with a little butter.See notes for making these into pancake bites.
- Add the ingredients to a blender in the following order: 4 eggs, 1 cup Kodiak Protein Pancake Mix, and ½ cup cottage cheese. Blend until smooth.
- Pour about ⅓rd of a cup of batter on to the pan and cook for about 2 minutes on each side. Flip the pancake when bubbles begin to appear in the wet batter.
- Repeat with all the batter and then enjoy with your favorite toppings!

I made these today for my 9yo’s lunches this week- he loves leftover pancakes for lunch. There were just enough for 4 days, 2 in each baggie, with a big one left over. It's per serving which is 2-3 pancakes depending on how large you make them.
