These fruity pebble treats are not only tasty but they're also so easy to make and will last if you store them right! They only take 10 minutes to make and use simple ingredients. Wrap them airtight and they can last a couple of weeks - but most likely they'll be eaten before then!
Protein Fruity Pebbles Rice Crispy Treats Ingredients
All substitution options are a 1:1 substitution unless noted otherwise.
Fruity Pebbles: There's no debate that Fruity Pebbles are the best cereal ever. They're colorful, tasty, and crunchy. They make the perfect cereal for making crispy treats!
Substitutions: Any of your favorite cereals will work. A rice-based or lighter cereal is preferred. Cocoa Pebbles would be delicious! It's always good to test your ingredients to make sure you're not using stale cereal to start.
Marshmallows: We use mini marshmallows because they seem to melt faster the smaller they are. And we're all about convenience here!
Substitutions: Any plain or vanilla marshmallows will work, see notes above about preferred brands. Mini marshmallows will also work. Marshmallow fluff will not work since it does not become solid at room temperature.
Vanilla Extract: Vanilla extract adds a little extra flavor to these already delicious treats.
Substitutions: Any vanilla can be used or these can be omitted. Vanilla beans and vanilla bean paste can be used also, in a reduced quantity. Origines Paradise Provisions is our favorite vanilla extract.
Butter: Butter adds flavor and is essential to ensure the marshmallow mixture doesn't become too sticky. If we didn't use butter it'd be hard to work with the marshmallows!
Substitutions: Coconut oil may work but this has not been tested. Salted or Unsalted butter can be used or vegan butter.
Vanilla Protein Powder: Vanilla-flavored protein powder complements the flavoring of marshmallows and cereal well.
Substitutions: Any vanilla protein powder can be used. Fruity Pebbles Protein Powder can also be used! Fruity Pebbles Protein Powder can be found here. Or, protein can be omitted altogether.
How to make High Protein Fruity Pebble Marshmallow Treats:
Step One: Melt butter over medium heat in a large pot.
Step Two: Add marshmallows to melted butter and continue to heat on low until almost melted and you are left with just gooey marshmallows. We like to use a silicone spatula for this to keep the marshmallow from sticking.
Step Three: Mix in protein and vanilla! When marshmallows are almost completely liquid, add the protein powder to the marshmallow mixture and continue to stir over low heat until dissolved. Then, add vanilla and stir.
Step Four: Add Fruity Pebbles Cereal! Remove pot from heat and gently stir in cereal. The more carefully you stir, the more tender the cereal bars will be. Pour the mixture into an 8x8 (or similar) airtight container (or one that can be covered tightly).
A good way to keep the cereal mixture from sticking is to use a buttered spatula or wetted spatula to gently press the mixture into the prepared pan or container. The container can be any size that is approximately 8x8 or even a bread pan size. It can be helpful to grease the pan with butter or nonstick cooking spray.

Does any protein powder work for this recipe?
While technically yes, any vanilla or fruity pebble protein will work, we highly recommend Dynamite Fruity Pebble Protein, and also I Heart Macros for any protein in baked or cooked recipes. This protein does not have a traditional chalky taste and is much easier on the stomach for those who have a hard time digesting protein.
How do I make this recipe vegan?
Great question! This recipe can be made vegan with the use of vegan butter (like Earth Balance) and vegan marshmallows (like Dandies).

These treats will last for 2-3 days covered or up to two weeks when wrapped tightly in plastic wrap. Think about how the classic marshmallow treat is wrapped tightly and individually to keep from becoming stale.

- 3 tablespoon butter
- 4 cups Fruity Pebbles
- 10 oz marshmallows
- 1 teaspoon vanilla extract
- 2 scoops vanilla protein powder or Fruity Pebbles Protein Powder 25 grams per scoop
- Melt butter over low to medium heat in large non stick pot
- Add marshmallows to melted butter and stir continuously over low heat until marshmallows are almost melted. Using a silicon spatula for this will help keep the marshmallow from sticking to everything.
- Add protein powder and vanilla and stir until dissolved and marshmallows are completely melted
- Remove from heat and add cereal
- Stir gently (the more gentle you stir, the more tender the bars will be) until cereal is completely coated
- Transfer mixture to a resealable 8x8 container and gently press into pan. When pressing into pan, get silicon spatula wet and then press. This helps to keep the mixture from sticking to the spatula
- For best results let set for 30 minutes to set up and enjoy!
