Rich and decadent truffles are one of Dan's and my favorite desserts. So when I figured out how to make healthier peanut butter truffles at home we almost lost our minds! They are chocolately, creamy, sweet, and pack in more protein thanks to Greek yogurt and peanut butter powder.

- Quick: These are a no-bake high protein dessert that comes together in 15 minutes.
- Make them ahead of time: Save the headache of making dessert right before a party and prep these up to 2 weeks in advance! Just store them in the fridge.

ingredient notes & substitutions
All substitutions are a 1:1 substitute unless otherwise noted. See the recipe card for quantities.
- Peanut butter powder: This is higher in protein and lower in fat than peanut butter. Plus, it makes for the perfect texture in the truffles! We get ours at Costco (it doesn't have any added sugar).
- Oat flour: I prefer to buy this because the consistency is much more consistent. But you can also make it yourself with a blender or food processor.
- Peanut butter: Yup, we need peanut butter too! Alternatively, you can mix your peanut butter powder with water per the package directions to make your own peanut butter.
- Greek yogurt: Plain Greek yogurt adds protein and creaminess. I use non-fat but any kind will work. Make more of our favorite Greek yogurt dessert recipes with the rest of your tub!
- Maple syrup: I'm using monk fruit maple syrup for less carbs but regular maple syrup works great too!
- Chocolate chips: Grab dark chocolate or semi-sweet chocolate chips to make the outer shell.
- Salt: Every dessert needs salt. It makes other flavors taste better!!
- Coconut oil: Only coconut oil will create the magic shell effect! If you don't have this, you can leave it out. If you are trying to use up your jar, use it to make these protein bars without protein powder and healthy homemade Twix bars.

high protein ingredient spotlight: peanut butter powder
Peanut butter powder is made by removing the fat from peanuts and roasting them. This leads to a powder that is higher in protein and lower in fat than peanut butter. You can easily add it to liquid to create peanut butter or to thicken and flavor things like this peanut butter latte or protein puppy chow.

- Make the peanut butter filling by mixing it all together.
- Scoop the filling into balls and place each on a sheet tray lined with parchment paper. Freeze for 10 minutes.
- Make the chocolate coating by melting the chocolate chips with the coconut oil. Mix in the peanut butter powder.
- Dip the peanut butter balls into the chocolate mixture and top with crushed peanuts or flaky sea salt.

Tip to keep the mixture from sticking
The peanut butter mixture can stick to your hands so I lightly wet my hands to roll them into balls. This keeps them from sticking. I also use a cookie scoop to keep each one mostly uniform in size.
storing them
These are ok kept at room temperature for up to an hour but then they start to soften. It's best to keep them in the fridge.
- Fridge: Keep these in an air-tight container for up to 2 weeks in the fridge.
- Freezer: You can also freeze them for up to 3 months and enjoy straight from frozen.

healthier peanut butter truffles
Ingredients
Peanut Butter Filling
- ½ cup peanut butter powder
- 1 cup oat flour
- ½ cup peanut butter (no added salt)
- ¼ cup plain Greek yogurt (non-fat)
- ¼ cup monk fruit maple syrup
- ¼ teaspoon salt (or as needed)
Chocolate Coating
- ½ cup semi-sweet chocolate chips
- 1 teaspoon coconut oil
- 2 tablespoon peanut butter powder
- ⅓ cup crushed peanuts or a few
- tablespoons of flaky sea salt for

Instructions
- Mix peanut butter filling ingredients until fully combined (it will be thick). Line a sheet tray with parchment paper or a silicone mat.
- Scoop 16 balls onto the tray using a 1.5" cookie scoop or two spoons. Dip the scoop/spoons in water to prevent sticking. Freeze for 10-15 minutes while preparing the chocolate coating.
- Melt chocolate chips and coconut oil in a bowl, microwaving in 30-second intervals and stirring each time (1-1.5 minutes total). Stir in peanut butter powder.
- Coat frozen peanut butter balls in melted chocolate using a fork. Place on the lined tray,sprinkle with flaky sea salt or crushed peanuts, and freeze for 15 minutes to set.
