What Does Ground Bison Taste Like?
This is the question I get asked the most! Bison has a more delicate, slightly sweeter flavor than ground beef. It's not really gamey - in fact, most people find it milder than beef, which is why it's such a great swap.
The texture is similar to lean ground beef, so it works in pretty much any recipe where you'd normally use ground beef. Think tacos, pasta sauces, meatballs, chili - all of it. The main difference you'll notice is that it feels a bit lighter since it has significantly less fat.
Tips for Cooking with Ground Bison
Before you jump into the recipes, here are a few things I've learned from cooking with ground bison over the years:
- Ground bison is leaner than beef. Ground bison has less fat than most ground beef, which is great nutritionally but means you may need to add a little oil or butter when sautéing vegetables in the same pan. Without that extra fat, things can stick.
- It cooks faster because it has less fat. Less fat means less insulation, which means the meat cooks quicker than beef. I find this helpful but if you get busy while cooking, it can start to burn pretty quickly.
- Don't overcook it. Since bison is lean, overcooking can make it dry. Aim for just cooked through and you'll get a juicier, more flavorful result. You can always check with a meat thermometer - you're looking for an internal temperature of 160 degrees.
