- Coconut Milk - Corn Starch - Peppermint Extract - Powdered Sugar - Vegan Chocolate Chips - Coconut Oil

Mix the coconut milk, cornstarch, and peppermint extract in a small sauce pan.

Step 1

Heat the sauce pan over medium heat and stir continuously until the peppermint mixture is thickened.

Step 2

Spray silicon cupcake molds or a cupcake pan with non-stick spray. Pour the coconut mixture into the molds. Freeze till solid.

Step 3

Melt the chocolate and coconut oil and mix. Dip the frozen filing into the chocolate to coat. Let them dry, then enjoy!
