These flat beef enchiladas are so simple and quick to make. They're a low-carb, high protein meal and are the perfect dish for a busy weeknight or for meal prep!

Ingredients

- Beef - Onion, garlic - Corn - Chipotles in adobo sauce - Taco seasoning - Tortillas - Cheddar cheese - Enchilada sauce

Dice up onion into small pieces. Then, sauté onions and garlic in a large skillet over medium heat until fragrant and translucent.

Step 1

Brown the ground beef in the same skillet as the onions and garlic. Cook on medium heat until the beef is fully browned.

Step 2

Add the frozen corn halfway through browning the beef. Adding the corn now will help it thaw quicker.

Step 3

Lay a low carb tortilla in the bottom of a 9x9 pan or oven safe skillet. Then, top with cheddar cheese and a layer of beef and sauce.

Step 4

Repeat the last step with another layer of tortilla, cheese, beef and sauce. Then, bake for 30 minutes at 350 degrees.

Step 5

Turn the oven to broil for an additional 3 minutes for a crispy top. Then, remove and let cool for a few minutes before enjoying!
