Ingredients

- Potatoes - Baking soda - Duck fat or olive oil - Salt - Assortment of spices (see recipe for full list)

Preheat oven to 500 degrees F. Cut potatoes into 1/2 inch thick chunks that are about 1 - 2 inches wide.

Step 1

Boil potatoes in a large pot with baking soda and salt. Boil for about 5 minutes until potato pieces can be punctured with a fork.

Step 2

Strain parboiled potatoes. Then, mix them in a bowl with duck fat or olive oil and all the seasonings.

Step 3

Place potato chunks in a single layer on a baking rack. Bake for 45 minutes in the oven (no need to flip half way through).
