Ingredients

Instructions

  • Preheat the oven to 425 degrees and line a baking sheet with foil. Bake the 12 slices bacon for about 15 minutes until crispy. You can also use the air fryer. When done, remove from the oven and pat dry with a paper towel.  Chop or crunch the bacon into small pieces and set aside.
Cook the 2 c shredded chicken if needed or use canned or rotisserie.
  • Cook 16 oz banza farfalle pasta as directed, strain, and run under cold water to cool immediately.
  • While the pasta and bacon is cooking, dice the 1 avocado and 1 red onion and halve the 2 cups cherry tomatoes.
  • Mix the 2 tablespoon mayo, ¼ c white vinegar, ¼ c avocado oil, 1 teaspoon salt, ¼ teaspoon pepper, and 2 tablespoon dijon mustard in a bowl or jar.
  • Combine everything in the large bowl with the dressing and gently mix to coat in sauce. Enjoy right away or leave in the fridge until ready to eat.  This can be kept in the fridge for 5 days.

helpful tips

  1. If traveling: Wait to add the avocado until right before serving or leave it out all together to prevent brown clumps.
  2. Use a bigger bowl than you might think: No seriously, whatever bowl you grabbed, go grab a bigger one. Or even a stock pot.
  3. Dice everything nice and small so you can have a little bit of everything in every bite. With the exception of the tomatoes because those are too much work to cut smaller.
  4. To quickly cool the pasta, strain it and run cold water around it. Use a spoon to stir as you spray cold water so it all stops cooking asap.

how to store & meal prep it

fridge

This protein pasta salad will keep in the fridge in an airtight container for up to 1 week. However, the avocados will start to brown as the time goes on.

frozen

I don't recommend freezing this. You can freeze the pasta seperate but I wouldn't freeze the whole pasta salad.

meal prep

I love prepping this for lunch! You can store in it a seperate container to simply grab it on the way out the door or keep it in one big bowl. Sometimes I will put it on top of crunchy lettuce for a full BLT experience too!
