Preheat the oven to 350 degrees. Line a tray with foil or a silicon mat and place a wire rack on top.
Toss the spinach in the oil and seasoning in a large bowl.
Spread out the spinach over the wire rack evenly, leaving a ½” space between leaves. You will have to bake in two batches to ensure there is enough space between spinach leaves.
Bake for 15-17 minutes or until crispy. Watch closely because spinach can burn quickly.
