This Lemon Ricotta Pasta is made by combining ricotta cheese with fresh lemon juice to make a creamy and tangy sauce to smother your pasta in!

Ingredients

- 1 lemon - 1/4 cup basil - 2 cups ricotta - 2 tbsp olive oil - 1 tbsp minced garlic - 1 cup parmesan - 1 cup peas - salt and pepper

Make the pasta according to the package instructions in a large pot of salted water. Strain, but reserve 2 cups of pasta water for the sauce.

Step 1

While the pasta cooks, add your sauce ingredients (ricotta, parmesan, basil, lemon juice, and lemon zest) to a blender or food processor and blend until smooth.

Step 2

With pasta removed from the pot, add blended ricotta mixture,  garlic, salt, and pepper. Cook on medium heat until the cheese has melted. Then, add pasta water and stir.

Step 3

Add peas to ricotta mixture in pot and cook for another couple minutes. Then, add pasta back to pot and stir until well coated.

Step 4

Garnish with fresh basil, additional parmesan, and lemon zest.  Serve with a Cesar salad, fresh bread, or garlic bread. Enjoy!
