orange cashew meal prep chicken salad
Crunchy cabbage, carrots and cashews tossed with canned chicken in an orange dressing. High protein, loaded with veggies, and it holds up all week in the fridge.

the sauce
- ¼ cup avocado oil
- ¼ cup rice vinegar
- 3 tablespoon soy sauce low sodium
- 2 tablespoon honey
- 2 tablespoon mayo or tahini
- 1 tablespoon orange zest
the salad
- 12 oz canned chicken drained or rotisserie
- 1 cup cabbage shredded
- ½ cup shredded carrots
- 1 bell pepper diced
- 1 bunch cilantro chopped
- 4 green onions sliced
- ½ cup cashews chopped
- 1 cup shelled edamame thawed if frozen
- ½ teaspoon salt season as desired
- ½ teaspoon pepper
- 1 cara cara orange segmented and diced, or 2 cans mandarin oranges, drained
Whisk together the ¼ cup avocado oil, ¼ cup rice vinegar, 3 tbsp soy sauce, 2 tbsp honey, 2 tbsp mayo or tahini and 1 tbsp orange zest until smooth.
Drain the 12 oz canned chicken well and add it to a large bowl. Break it up with a fork.
Add the 1 cup cabbage, ½ cup shredded carrots, 1 bell pepper, 1 bunch cilantro, 4 green onions and ½ cup cashews and 1 cup shelled edamame to the bowl.
Pour the sauce over and toss to combine. Season with ½ tsp salt and ½ tsp pepper as desired.
Fold in the 1 cara cara orange segments last so they stay intact. I like to use cara cara because they are so sweet, but any orange works!
Meal prep: Holds up in the fridge all week. For maximum crunch, hold the cashews and add them as you serve.
Mayo or tahini: Either works. Tahini leans nuttier, mayo leans creamier.
Oranges: use any orange you like!
