High Protein Smores Yogurt Parfait

Based on our viral brownie protein parfait, this high protein smores yogurt parfait packs in 25 grams of protein without protein powder!

Ingredients

  • ¼ c sea salt crackers or graham crackers
  • 1 tablespoon coconut sugar or brown sugar or sugar free, low calorie option
  • ½ tablespoon cinnamon
  • 1 tablespoon melted butter can use a low calorie substitute
  • ¾ c Greek yogurt plain or Siggis vegan yogurt to be dairy free
  • 2 tablespoon instant vanilla pudding mix can use sugar free
  • 1 tablespoon cocoa powder
  • 3 tablespoon chocolate syrup can use sugar free
  • 2 tablespoon marshmallow fluff
  • Extra chocolate for drizzling

Instructions

  • Add the crackers, coconut sugar, and cinnamon to a blender, food processor, or freezer plastic bag. Blend or crush until pulverized.
  • Mix this together with the melted butter until you get a wet sand texture.
  • In another bowl, add the yogurt and pudding mix and mix well.
  • In a jar, layer half of the cracker mixture and then half of the yogurt on top.
  • In the remaining yogurt, add the cocoa powder and chocolate syrup and mix well. Add this to the jar, on top of the vanilla yogurt mixture.
  • Finally, top with the remaining cracker mixture and marshmallow fluff. Use a torch to toast this if desired (totally optional but yummy!) and drizzle with additional chocolate syrup. Enjoy!

Notes

I get this is a lot of calories - if you want less go ahead and swap for low calorie options. Butter is a big calorie sink, so that would be the first one I would swap.
🌟Tips
To make it dairy free: Use a dairy free yogurt like Siggis which is also high protein. Pudding mix and chocolate syrup are both already dairy free.
❓Can I make this with vanilla Greek yogurt?
Yes, if you use sweetened yogurt, just use less pudding mix or chocolate sauce. I like to use plain because you can control how sweet or un-sweet it is based on your taste preferences.
❓Can this be made sugar free?
Yup, simply use sugar free pudding mix and sugar free chocolate sauce!
❓How do I meal prep this or make it ahead of time?
The key to storing parfaits is in the layering. To make these ina advance to enjoy all week layer the yogurts and the marshmallows but keep the gluten free cinnamon sugar mixture on the side. Top with this right before enjoying these smores parfaits. I also like to keep them in mason jars for easy meal prep transport.
