healthier peanut butter blossoms (high protein)

My healthier peanut butter blossoms are easy to whip up in just 15 minutes with no chill time and a short bake time. They have 5g of protein as opposed to standard cookies, which have around 2, and for the same calories.

Ingredients

  • cup pb powder + 3-4 tablespoon water* see notes
  • 2 tablespoon runny peanut butter
  • 1 tablespoon light butter, melted any butter is fine
  • 3 tablespoon egg whites can use 2 whole eggs
  • 1 tablespoon maple syrup or sugar free alternative
  • 1 teaspoon vanilla extract
  • cup brown sugar or coconut sugar or sugar free alternative
  • cup all purpose flour
  • ¾ teaspoon baking powder
  • ½ c hemp seeds hulled hemp hearts
  • ½ teaspoon salt
  • 14 Hershey's Kisses dark chocolate or milk chocolate

Instructions

  • Preheat the oven to 350 degrees.
  • In a bowl, mix together ⅓ cup pb powder + 3-4 tablespoon water*, using 3 tablespoon at first and then adding 1 more as needed for a runny, normal peanut butter-like consistency. This will vary based on the type of PB powder you use.
    Pour this into a ⅓rd measuring cup and then add your 2 tablespoon runny peanut butter on top or as much needed to get ⅓ cup of total peanut butter.
  • Pour this into a large mixing bowl and then add the 1 tablespoon light butter, melted, 3 tablespoon egg whites, 1 tablespoon maple syrup, 1 teaspoon vanilla extract, and ⅓ cup brown sugar and mix well using a hand beater.
  • Add in the ⅔ cup all purpose flour, ¾ teaspoon baking powder, ½ c hemp seeds, and ½ teaspoon salt and mix until a thick cookie dough has formed. Use a 1.5 tablespoon cookie scoop to scoop out 14 balls.
    Place these on a sheet tray (they don't need much space between) and then use the back of a spoon or your hand to gently press down or flatten the cookies. If the dough is sticky, lightly wet the spoon each time it starts to stick to prevent it from sticking more.
  • Bake for 10-12 minutes or until set around the edges. While they bake, unwrap the 14 Hershey's Kisses dark chocolate.
    Remove from the oven and then immediately press the chocolate Kisses into each cookie's center. Let cool for 10-15 minutes, then enjoy! Let cool completely before storing.

Notes

*Peanut butter powder varies, so add 3-4 tablespoon of water or enough to get a runny, normal peanut butter consistency. Then we will supplement this with regular peanut butter for a total of ⅓rd cup. You can also just use ⅓rd cup of regular peanut butter, but the fat will be higher and protein lower.
Storage: These will keep at room temperature for up to 7 days, or you can freeze them for up to 3 months. Freeze in a single layer first, then transfer to long-term storage. 
Freezing the dough: You can roll out and flatten the dough and freeze it. Bake from frozen, but add a few minutes to the bake time.
Can I leave off the chocolate? Yup! But the cookie base isn't terribly sweet, so you may want to roll them in sugar before baking.
Low-calorie peanut butter blossoms: You can reduce the calories further by using low-calorie sweeteners.
