Buffalo Chicken Smash Tacos

When you've only got 20 minutes to get dinner on the table and want something extra flavorful, these buffalo chicken smash tacos are it! They are seriously delicious, incredibly easy, and packed with bold buffalo flavor. Plus, they are extra high in protein thanks to a quick homemade ranch!

Ingredients

  • 4 low carb flour tortillas 8 inch
  • 1 lb ground chicken*
  • cup buffalo sauce
  • 4 tsps ranch seasoning
  • ¾ cup Greek yogurt plain low fat
  • ½ cup bleu cheese crumbles
  • ¼ cup red onions diced
  • 1.5 cups lettuce chopped

Instructions

  • Heat a skillet on the stove over medium heat with oil or butter.
  • Mix the 1 lb ground chicken*, 2 tablespoon buffalo sauce, 2 teaspoon ranch seasoning, and ¼ cup of blue cheese crumbles in a large bowl.
  • Use the back of a spoon to spread ¼ of the buffalo chicken mixture evenly onto each of the 4 low carb flour tortillas.

  • Cook each tortilla with the chicken side down on the hot skillet for 4-5 minutes. Then, flip and cook on the other side for 1 minute. Repeat with all four tortillas.
  • Mix together 2 teaspoons ranch seasoning with ¾ cup Greek yogurt to make a high-protein ranch topping (we like ours thick, but you can thin it out with 1-2 tablespoon of milk if you like).
  • After cooking, top tacos with the remaining buffalo sauce, ranch dressing, bleu cheese, diced red onions, and lettuce. Then, enjoy!

Notes

Storage: If you don't think you'll eat all of these, store them before adding the cold toppings. Then, once warmed, reheat and top with lettuce and red onion.
*Ground turkey works too. For chicken, be sure to use white meat chicken, as dark meat is way too fatty. Most ground chicken sold in the store is white meat (typically chicken breast), but on rare occasions, you will see dark meat (avoid it for this recipe!!).
Nutrition is calculated using Mission low-carb tortillas, but use your favorite brands. We just found in our testing that low-carb tortillas are more pliable, making for a better eating experience and more fiber!
