Ingredients

- eggs - lemon - flour - sugar - coconut milk - butter - salt - collagen peptides

Combine shortbread crust ingredients with your hands. Rubbing the butter and flour together until crumbly and sand like.

Step 1

Press the dough into an 8x8 pan that's lined with parchment paper. Bake for 16-18 minutes or until golden brown.

Step 2

Heat the eggs, sugar, lemon juice, butter, and collagen until thickened to the point it holds its shape on a spoon.

Step 3

Pour in the coconut milk and stir to combine. Strain the mixture if needed if any egg bits scrambled. 

Step 4

Pour the curd over the hot crust and bake for another 15 minutes until the center is just set but still jiggly.

Step 5

Let cool at room temp for 1 hour and then in the fridge for 2 hours. Then cut, dust with powdered sugar and enjoy!
