This Ice Cream Recipe without Heavy Cream is made with just a few simple ingredients! It’s vegan, gluten free, does not require an ice cream maker, and is ready in 5 minutes in the blender!  It’s so creamy and sweet, my grandma thought it was pudding I froze… (I like to think of it as a classic custard base ice cream) and it’s so easy to make!

Ingredients

  • 16 oz Non-Dairy Heavy Whipping Cream
  • 11.6 oz sweetened condensed coconut milk
  • 2 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ½ cup apricot jam

Instructions

  • Add all ingredients, except apricot jam, to a blender or food processor.
  • Blend until smooth and fluffy, usually 1-2 minutes
  • Pour into freezer safe container, like a bread pan
  • Add apricot jam in small spoonfuls and swirl into the cream
  • Freeze for at least 5 hours or overnight
  • Enjoy!
