Easy Cheese Potato Bread

Ingredients

  • 1-½ cup cheddar cheese
  • 1 can Biscuit Dough 8 biscuits per can
  • 1 cup potatoes canned
  • 3 tablespoon parsley
  • 2 tablespoon bacon bits
  • ¼ teaspoon Garlic
  • teaspoon salt
  • ¼ teaspoon pepper

Instructions

  • Preheat oven to 350 degrees F.
  • Finely chop parsley and grate cheese. Add potatoes to a large bowl. Mash them up using the back of a fork or a potato masher tool such as this one.

  • Add cheese, 2 tablespoon parsley, bacon bits, garlic, salt and pepper to bowl with mashed potatoes. Mix everything together until the biscuit filling is well combined.

  • Remove biscuit dough from can. Cut biscuits into ¼ pieces and press down until they're flat and about 3" wide. You can also use a rolling pin to flatten the biscuits.

  • Fill the biscuit dough disks with the cheese and potato mixture. They should each have about one tablespoon of filling. Fold the sides of the biscuits up and pinch the soft dough together so that the filling is sealed inside. Repeat this for all the biscuit pieces.

  • Place biscuit pieces in a cast iron or 8"x8" baking tin. Bake at 350 degrees f for 30 minutes.

  • Melt butter in the microwave in a small bowl. Add one tablespoon parsley to butter and stir. Remove biscuits from oven after 30 minutes and then spread melted butter on top of the bread. Return to oven to cook for an additional 5 minutes. The butter will add a tasty crispy finish. Remove from oven and enjoy!
