Ingredients

  • 8 english muffins
  • 1 bell pepper (diced)
  • 1.5 cups chicken sausage
  • 12 eggs
  • ¼ cup milk
  • 8 slices pepperjack cheese
  • ½ cup chipotle sauce

Instructions

  • Dice bell peppers and chicken sausage. Thaw sausage if needed. Preheat oven to 350 degrees. Grease a 9x13 inch baking pan.
  • Saute peppers and chicken sausage till golden brown.
  • While those cook, add eggs and milk to bowl and whisk together.
  • Transfer bell peppers and sausage to egg mixture and mix together, then transfer to 9x13 inch pan.
  • Bake for 20 minutes or until eggs are just set. While the egg bakes, toast the English muffins.
  • After done baking, let the egg bake cool for 5 minutes, then cut into 8 even pieces.
  • Assemble the sandwiches by layering the bottom English muffin slice, egg slice, pepper jack cheese, chipotle sauce (spread on top muffin piece), and top English muffin slice.
