Sweet maple and spicy chorizo come together in this high-protein breakfast skillet. It makes the ultimate one-pot breakfast that only needs 8 ingredients!

- Chorizo - sweet potatoes - bell pepper - onion - maple syrup - eggs - chili powder & salt

Saute the red onions and sweet potatoes in a skillet with oil. Cook until the onions are translucent and softened.

Step 1

Once the onions are soft, add the chorizo. Break it up as it cooks. Cook until it's fully cooked through and the fat is rendered.

Step 2

Add the bell peppers to the pot and continue to cook for 3-5 minutes. The peppers should be soft but still have a crunch.

Step 3

Make 4 wells int he hash mixture and crack an egg into each one. Cook until the whites are set but the yolks still runny.

Step 4

Once the eggs are done to your liking, top wi fresh cilantro or parsley and enjoy! This is great for a family of 4 or meal prep!
