Ingredients

- Potatoes - Baking soda - Duck fat (or olive oil) - Salt - Perfect mix of spices (see recipe for full list)

First, preheat the oven to 500 degrees F. Cut the potatoes into about 1/2  inch thick pieces that are 2 inches wide.

Step 1

Add potatoes to a large pot and fill with cold water, baking soda, and salt. Bring to a boil. Then, reduce to a simmer and cook 5 mins.

Step 2

Strain the potato pieces onto a towel and let them sit to dry off. Then, mix them in a bowl with melted duck fat and seasonings.

Step 3

Place the potato chunks in a single layer on a baking rack on top of a tray. Bake for 45 minutes in the oven at 500 degrees F.
