Ingredients

- Potatoes - Baking soda - Duck fat or olive oil - Salt - Assortment of spices (see recipe for full list)

First, preheat the oven to 500 degrees F. Cut the potatoes into 1/2 - 1 inch thick chunks that are about 2 inches wide.

Step 1

Add potatoes to a large pot and fill with cold water, baking soda and salt. Bring to a boil, reduce to simmer and cook for 5 minutes.

Step 2

Strain the potato pieces and let sit for a minute. Then, mix them in a bowl with duck fat or olive oil and all the seasonings.

Step 3

Place potato chunks on a baking rack. Bake for 45 minutes in the oven (I like to make seasoned sour cream while I wait)!
