This easy, sheet pan carrot cake is a fun twist on the classic Easter treat. It has a zesty orange goat cheese & cream cheese frosting .

Ingredients

- carrots - flour & almond flour - greek yogurt - maple syrup - hemp seeds - goat cheese & cream cheese - oil, eggs, vanilla - swipe up for the full list

Shred the carrots and then roast until soft, dry, and slightly golden. This should take about 10 minutes.

Step 1

Combine your dry ingredients in a large bowl. Use a whisk or fork to fully mix everything. Make sure your bowl is extra large!

Step 2

Add your wet ingredients and mix until *just* combined. If it's over mixed the cake will be dense.

Step 3

Fold in the carrots, the hemp seeds, and pineapple just to distribute evenly throughout. Again, don't over mix it!

Step 4

Pour the batter into a greased and floured pan and bake for 35 minutes or until baked through. You can check with a toothpick.

Step 5

Make your frosting by whipping together the goat cheese, cream cheese, powdered sugar, and orange zest. Store in fridge.

Step 6

Once the cake cools, top with frosting and any extra roasted carrot bits. Enjoy cold! It also freezes really great!
