Sweet Potato Waffles: Your New Breakfast Obsession

- Sweet Potato - Eggs - Flour - Milk, oil - Baking soda, salt - Cashew butter - Maple syrup - Vanilla

Cook your sweet potato for 6 minutes in the microwave. While that cooks, add the remaining ingredients to a blender.

Step 1

Once the sweet potato is cooked, scoop out the flesh and add to the blender. Then, blend all the ingredients until smooth.

Step 2

Turn on the waffle iron and wait for it to heat up. Then, add 1/3 cup of the waffle batter. Close the lid completely to cook.

Step 3

Once the waffle iron light goes off the waffles are done! Remove the waffle with a fork and repeat with the rest of the batter. 

Step 4

Enjoy and eat with your favorite toppings! We like bananas and syrup for sweet waffles, and eggs and avocado for savory.
