Ingredients

- Apricots - Eggs - Butter - Honey - Vanilla - Flour - Baking soda, baking powder, ginger, salt

Heat water and then combine hot water and apricots in a glass jar. Set jar aside to allow apricots to soften.

Step 1

Use a stand mixer or hand mixer to combine wet ingredients in a large bowl. Mix until well combined.

Step 2

Add the remaining dry ingredients to the wet ingredients in a large bowl and mix. The batter should get very fluffy!

Step 3

Next, puree the apricots and water until slightly chunky. Then, fold the pureed apricots in with the batter to mix.

Step 4

Transfer the batter to individual ramekins or muffin tins, depending on desired size. Bake at 350 degrees F for 30 minutes.

Step 5

While the cake bakes, make your toffee caramel sauce over the stove. Let ingredients simmer for 10 minutes while stirring.

Step 6

Remove cake from oven and let cool. Then top with caramel sauce, vanilla ice cream, or whatever your heart desires!
