Ingredients

- Steak - Eggs - Sweet Potato - Steak Seasoning Chimichurri ingredients  - Mint, Cilantro, Parsley  - Oil & Lime juice - Jalapeno - Garlic, Salt, Pepper

While the grill heats up, make the chimichurri sauce by blending all the ingredients. You can make this sauce up to 2 days early

Step 1

Place the diced sweet potatoes, oil, and part of the steak seasoning in the cast iron skillet. Toss until evenly coated.

Step 2

Pop this skillet on the grill to begin cooking. This will cook for 5 minutes before we move onto the steak.

Step 3

While the potatoes begin cooking, season the steak with the rest of the steak seasoning. Then cook for 4-5 minutes on each side.

Step 4

When you flip the steak, you will also start the eggs. Crack the eggs on top of the potatoes and let cook for 5 minutes.

Remove everything from the grill. Slice the steak thinly and place it on top of the potatoes for serving.

Top the steak with your chimichurri sauce. I like a lot of sauce so I will save some for individual serving.
