These pumpkin pie bars are a take on classic pumpkin pie, but better! They have a crunchy crust, flavorful filling, and gooey meringue topping!

Ingredients

- Pumpkin puree - Graham Crackers - Eggs, butter, milk - Sugar - Cream of Tartar - Cornstarch - Spices

Pulverize the graham crackers and then mix them with melted butter and brown sugar. It should resemble a wet sand.

Step 1

Line an 8" x 8" pan with parchment paper. Then, press the graham cracker mixture into the pan and bake at 350 for 10 minutes.

Step 2

Make the custard by mixing together all the filling ingredients in a large bowl until they're well combined with no chunks.

Step 3

Spread the filling over the baked crust. Put back in the oven and bake for another 30 minutes until the top of the bars are golden brown.

Step 4

Let the bars cool for a couple of hours, then make the meringue by whipping the egg whites and cream of tartar into soft peaks.

Step 5

Top the bars with the meringue and toast the top for a colorful finish if desired. These bars are best enjoyed cold!
