Ingredients

- Pumpkin puree - Three eggs - Pancake mix ("Just add water" style mix)

Heat a skillet over medium heat. Grease with butter or oil if needed. Then, mix ingredients in a large bowl until fully combined.

Step 1

Pour about 1/3 cup of pancake batter into the heated skillet. If large enough, you can cook multiple at once.

Step 2

Cook for about 2-3 minutes on each side. You'll know it's time to flip when you see a handful of bubbles forming in the batter.

Step 3

This recipe makes about 6 pancakes. Enjoy these with your favorite pumpkin pancake toppings. We love butter and maple syrup!
