One Pot Pasta With Ricotta and Lemon

This lemon and ricotta pasta is a perfect dinner for a busy night because it comes together in one pot and in just 30 minutes!

- Lemon, basil - Spaghetti pasta - Ricotta cheese - Olive oil - Garlic - Parmesan - Peas - Salt and pepper

Make your spaghetti by boiling it in water in a large pot until tender. Save two cups of the pasta water for later in the recipe.

Step 1

While the pasta cooks, add the sauce ingredients to a blender and blend until the sauce is smooth.

Step 2

Remove pasta and water from pot. Add sauce to pot and simmer for a few minutes. Then, slowly add pasta water to thin out.

Step 3

After about 5 minutes of simmering and stirring sauce, add peas for another minute. Then, stir the spaghetti in with sauce.

Step 4

Top with additional parmesan and black pepper if desired. Then, enjoy hot! Or save for later as a meal prep dinner.
