One Pot Lemon Gnocchi Recipe

This easy and delicious lemon gnocchi is ready in one pot and in under 30 minutes. It's also dairy free and can be gluten free!

Ingredients

- Gnocchi - Peas - Basil - Lemon - Salt & Pepper - Garlic - Mustard - Oat Milk

Saute garlic and mustard in a deep pan. This will also be where the gnocchi cooks so it should be at least 2.5" deep.

Step 1

Deglaze the pan by adding the oat milk, lemon juice, and lemon zest. Whisk this together and bring to a slow boil.

Step 2

Add the gnocchi to the boiling pot. Reduce to a simmer and let cook 5-7 minutes until the gnocchi is soft.

Step 3

After the gnocchi is done, remove some of the sauce and mix in a small bowl with the corn starch to make a slurry. 

Step 4

Add the slurry and the peas back to the pot and stir gently. Cook for 2 minutes, until the peas are soft.

Step 5

Mix in basil and top with pink peppercorn (if desired). Enjoy alongside your favorite protein!
