- cashew butter - coconut sugar - egg - baking soda - pure vanilla extract - cinnamon - can sugar

Step 1

Preheat oven to 350 degrees F. Then, combine cinnamon and cane sugar in a small bowl. Set aside for later.

Step 2

Add the remaining ingredients to a large bowl and use a hand mixer to mix until well combined.

Step 3

Scoop dough into balls and coat in cinnamon sugar. Place on baking sheet with parchment paper.

Step 4

Bake for 15 minutes. Remove and let cool for 10 minutes, then enjoy these soft and chewy cookies!
