Ingredients

- Chicken breast - Red pesto - Milk, cornstarch - Chicken broth - Parmesan cheese - Basil - Sun-dried tomatoes - Shallots, garlic, salt & pepper

Heat oil in a large pan on medium heat. Sear your chicken breasts for four minutes on each side until they're golden brown.

Step 1

Remove the chicken from the pan. Then saute the garlic, shallots, and sun-dried tomatoes for about two minutes.

Step 2

Add the red pesto to the pan and it mix together with the rest of the ingredients. Cook on low heat for two more minutes.

Step 3

Deglaze the pan by adding the chicken stock and scraping the bits stuck to the bottom. Then, whisk in the milk and cornstarch.

Step 4

Finally, add the chicken breasts back to the pan with the sauce. Cover, and simmer on low heat for about seven minutes.

Step 5

Enjoy this chicken smothered in tomato pesto sauce on its own or over a bed of your favorite pasta or rice for a filling meal!
